Dough for pizza, pizza, focaccia.

You will need:
- 1 k flour.
- Spoon of salt.
- 15grs Dry yeast.
- Oil.
- Warm water needed.
First you will do, is put the flour on a bowl, with yeast and mix it well, add salt and mix again, you will make a hole in the center and put a squirt of of oil (generously), add the water that the flour "ask you to have" and start with the spoon to unify all, i started making pizza when started cooking and this is a basic recipe done my way. When the dough is ready start using your hands gently and sob it to make air in her just by beating her into the bowl or table, when the dough is finally done put it or leave it in the same bowl, with a film huggin the dough and put a bowl over the dough (yes, another bowl, this works so good to keep the dough warm and levate a lottt) After the levate for 3 or four hours, take the dough (i dont degassificate it) Yield: for 2 rectangular pizzas and 1 little circle one as you can see in the photp. I only put it in the batch and leave it rest like 10 minutes while i make sause.
I knead the dough using my palms.
I push the dough inside the bowl like it sticks on the bottom and i rise it fast and beat it to the bottom and like that.So it becomes airy and soft.This while like 15 minutes.
After all that work, I put it in a bowl covered.

I put some oil on the trays and make the dough cover by it and stretch it.
And leave it stretched 10- 15 minutes to rest a bit more, so it grows more while on tray.
Then i put over the sause that i've done a pair of hours ago, but just a bit like paint it and bake it like that some minutes but not completely. This is a pre cook, for the dough.
After the precook, i put on the remaining sause, and send it to the oven for finish it cook, If wished add mozzarella, olives, oregano, albahaca thats your taste.
If i wish to make Focaccia, i previously put chopped onion in a little bowl with boiling water, and leave it aside, when like 30 m later, we quit the water, strained and add the oil (better if is the sunflower oil), i mean, it has no smell, i love it i preffer it in all cases... and orégano and salt to the chopped onion, and mix well.
We leave the onions get macerated.
After pre cook the dough, cover it with the onion mixture.and mozzarella. And send it to the oven to finish it cook.
